Savouring Pulses

As a vegan, I don’t always get to partake in food festivities.  When there are special tastings on, there is most often vegetarian food, but vegan gems are a more rare find.  This is why I, as geeky as it may be, am particularly excited about the Alberta Pulse Growers Savouring Pulses week that is taking place from May 9-15.

What are pulses?
Pulses are the edible seeds of legumes, like lentils, beans, peas and chickpeas. Each of these pulse crops come in a wide range of colours and sizes. The best part is, all of these pulses and more are grown right here in Alberta!

Today at lunch I had the pleasure of dining at Wildflower grill where I had a delicious mixed bean salad.  I know it probably sounds boring but it was everything but! It had all sorts of legumes from lentils to split peas and chickpeas and olives.  Best of all, you don’t need to be vegetarian or vegan to enjoy the dishes on offer at participating restaurants.
